Instructions
Begin by cooking the rotini pasta according to package instructions. Once cooked, drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooled pasta, black beans, corn, diced red and green bell peppers, cherry tomatoes, red onion, and cilantro.
In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt, and pepper until well mixed.
Pour the dressing over the pasta salad and gently toss until all ingredients are evenly coated.
Finally, fold in the diced avocado, being careful not to mash them.
Taste and adjust seasoning if necessary.
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
Serve the salad in a large bowl, garnished with additional cilantro and lime wedges on the side for a vibrant touch.
