2unitlimes, zest and juice

Instructions
In a large mixing bowl, combine the sliced chicken, olive oil, minced garlic, cumin, smoked paprika, chili powder, lime zest, lime juice, salt, and pepper. Mix until the chicken is well-coated in the seasoning.
Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and has a slight char.
Add the sliced bell peppers and onion to the pan with the chicken. Cook for an additional 4-5 minutes until the vegetables are tender but still crisp.
While the chicken and vegetables are cooking, warm the flour tortillas in a separate pan or in the microwave until soft and pliable.
To serve, layer the chicken and vegetable mixture onto each tortilla. Top with fresh cilantro, a dollop of sour cream, and salsa, if desired.
Fold the tortillas in half or roll them up, and enjoy your zesty lime chicken fajitas!
