In a blender, combine the diced mango, habanero peppers, honey, soy sauce, lime juice, grated ginger, and minced garlic. Blend until smooth.
Place the chicken wings in a large bowl. Pour the mango habanero sauce over the wings, ensuring they are well coated. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour (or overnight for deeper flavor).
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup and place a rack on top if available.
Remove the wings from the marinade, allowing excess marinade to drip off. Arrange them in a single layer on the rack or directly on the baking sheet.
Drizzle the wings lightly with vegetable oil, then season with salt and pepper. Bake in the preheated oven for 25-30 minutes or until the wings are golden brown and crispy, flipping halfway through.
In the last few minutes of baking, brush the wings with additional mango habanero sauce for a glossy finish.
Once done, remove the wings from the oven and let them rest for a few minutes. Garnish with chopped cilantro or green onions before serving.
