In a large bowl, combine the sliced strawberries and peaches. Add the granulated sugar, lemon juice, and vanilla extract. Toss until the fruit is well coated, then pour the mixture into a 9x13 inch baking dish, spreading it evenly.
In another bowl, mix together the rolled oats, all-purpose flour, brown sugar, cinnamon, and a pinch of salt.
Pour the melted butter over the oat mixture and stir until crumbly and well combined.
Evenly sprinkle the oat topping over the fruit mixture in the baking dish.
Bake in the preheated oven for 30-35 minutes or until the topping is golden brown and the fruit is bubbly.
Let it cool for about 10 minutes before serving.
