Ingredients

3 cups frozen hash browns, thawed

1/4 cup unsalted butter, melted

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

6 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup diced bell pepper (any color)

Fresh chives, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Hash Brown Crust: In a large bowl, mix the thawed hash browns, melted butter, garlic powder, onion powder, salt, and pepper until well combined. Press the mixture into the bottom and up the sides of a greased 9-inch pie dish to form a crust.

Pre-bake the Crust: Bake the crust in the preheated oven for 20 minutes or until it starts to turn golden brown. Remove from the oven and let it cool slightly.

Prepare the Filling: In another large bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded cheddar cheese, chopped spinach, halved cherry tomatoes, and diced bell pepper. Season with salt and pepper to taste.

Assemble the Quiche: Pour the egg mixture into the pre-baked hash brown crust, spreading it evenly.

Bake the Quiche: Return the quiche to the oven and bake for an additional 30-35 minutes or until the filling is set and slightly puffed up. A knife inserted in the center should come out clean.

Cool and Garnish: Let the quiche cool for about 10 minutes before slicing. Garnish with freshly chopped chives for added color and flavor.

Prep Time: 15 minutes | Total Time: 1 hour | Servings: 8 slices
