1poundboneless, skinless chicken breast, cut into 1-inch cubes
2wholefresh jalapeños, seeded and finely chopped
3tablespoonsolive oil
2wholelimes, zest and juice
2clovesgarlic, minced
1teaspoonground cumin
1teaspoonsmoked paprika

Instructions
In a large mixing bowl, combine the chopped jalapeños, olive oil, lime juice, lime zest, minced garlic, ground cumin, smoked paprika, and season with salt and pepper.
Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Preheat your grill or grill pan over medium-high heat.
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).
Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
Garnish with fresh cilantro and additional lime wedges if desired.
Notes
If using wooden skewers, soak them in water for 30 minutes prior to use.
