4 bone-in pork chops

1 tablespoon olive oil

Salt and pepper to taste

2 cups sliced yellow potatoes (about 4 medium potatoes)

1 onion, thinly sliced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup chicken broth

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare Pork Chops: Season pork chops with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear them for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

    Cook Onions and Garlic: In the same skillet, add the sliced onions and cook until they are softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Make Scalloped Potatoes: Layer the sliced potatoes in the bottom of a greased 9x13 inch casserole dish. Sprinkle with thyme and paprika, then add the cooked onions and garlic over the potatoes.

        Add Cream and Broth: In a mixing bowl, whisk together the heavy cream and chicken broth. Pour this mixture evenly over the potato layers.

          Layer Pork Chops: Place the seared pork chops on top of the potatoes and gently press down so they are partly submerged in the cream mixture.

            Add Cheese: Sprinkle the shredded cheddar cheese over the top of the pork chops.

              Bake: Cover the casserole with aluminum foil and bake in a preheated oven at 375°F (190°C) for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and bubbly.

                Rest and Garnish: Once done, let the casserole rest for 5-10 minutes before serving. Garnish with fresh chopped parsley for a pop of color.
