Instructions
In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage and set aside, leaving some drippings in the skillet.
In the same skillet, add the diced onion, bell pepper, and zucchini. Cook, stirring occasionally, until softened (about 5 minutes). Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Stir in the diced tomatoes with their juice, cooked sausage, Italian seasoning, and crushed red pepper flakes (if using). Bring to a simmer and let it cook for about 5 minutes.
Add the drained tortellini and spinach to the skillet. Gently toss to combine and heat through, allowing the spinach to wilt (about 2-3 minutes). Season with salt and pepper to taste.
Remove from heat and serve hot, garnished with grated Parmesan cheese and fresh basil leaves.

Feel free to adjust the spice level by choosing mild or spicy sausage.
