Instructions
Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized. Allow to cool slightly before squeezing the garlic out of the skins.
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped spinach and cook for about 2-3 minutes until wilted. Remove from heat and let cool.
In a mixing bowl, combine the roasted garlic, cream cheese, sour cream, Greek yogurt, shredded mozzarella, grated Parmesan, onion powder, salt, black pepper, and red pepper flakes if using. Using a hand mixer, blend until smooth and creamy.
Stir in the sautéed spinach until evenly incorporated into the dip mixture.
Preheat your oven to 350°F (175°C). Transfer the spinach dip mixture into a baking dish and spread it evenly. Bake for 25-30 minutes until bubbly and golden on top.
Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs and serve warm with pita bread, chips, or vegetable sticks for dipping.
