1 packet (2 ¼ teaspoons) instant yeast

½ cup granulated sugar

½ teaspoon salt

1 teaspoon cocoa powder

½ cup warm milk (110°F)

2 large eggs

¼ cup unsalted butter, melted

1 tablespoon red food coloring

½ teaspoon vanilla extract

½ cup brown sugar, packed

2 teaspoons cinnamon

¼ cup unsalted butter, softened

¼ cup finely chopped pecans (optional)

For the cream cheese frosting:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk

Instructions
 

In a large mixing bowl, combine the all-purpose flour, bread flour, instant yeast, granulated sugar, salt, and cocoa powder. Whisk well to blend everything together.

    In a separate bowl, mix the warm milk, eggs, melted butter, red food coloring, and vanilla extract until thoroughly combined.

      Gradually pour the wet mixture into the dry ingredients, mixing until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic.

        Place the kneaded dough in a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

          Once the dough has risen, roll it out on a floured surface into a rectangle about 1/4 inch thick.

            Spread the softened butter over the dough, then sprinkle the brown sugar, cinnamon, and chopped pecans (if using) evenly over the butter.

              Roll the dough tightly from one long edge to the other, forming a log. Slice the log into 12 equal pieces.

                Arrange the sliced rolls in a greased baking dish, leaving some space between them. Cover and let rise for about 30 minutes until puffy.
