Instructions
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
In a medium bowl, mix together the Parmesan cheese, breadcrumbs, chopped parsley, lemon zest, garlic powder, salt, and pepper. Set aside.
In another small bowl, whisk together the Dijon mustard, olive oil, and lemon juice until well combined.
Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Place the cod fillets on the prepared baking sheet. Brush the top of each fillet generously with the mustard mixture.
Press the Parmesan breadcrumb mixture onto the top of each coated cod fillet, ensuring an even layer.
Bake in the preheated oven for about 12-15 minutes or until the fish is opaque and flakes easily with a fork, and the crust is golden brown.
Remove from the oven and let cool for a couple of minutes before serving.
Notes
Serve on a bed of sautéed spinach or alongside roasted vegetables, garnished with lemon wedges and parsley.
