12 oz rotini pasta

1 lb ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 packet taco seasoning

1 (14 oz) can diced tomatoes with green chilies

3 cups beef or chicken broth

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for serving)

Instructions
 

In a large skillet or sauté pan, heat a splash of olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Add the ground beef or turkey to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if needed.

      Stir in the taco seasoning, followed by the diced tomatoes (with juices), corn, and broth. Bring the mixture to a gentle boil.

        Once boiling, add the rotini pasta and stir to combine. Reduce the heat to medium-low, cover the skillet, and cook for about 12-15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.

          Remove the pan from heat and stir in the shredded cheese and sour cream until well combined. Adjust seasoning with salt and pepper to taste.

            Let the dish sit for a few minutes to allow the cheese to melt fully and create a creamy texture.
