Ingredients

4 boneless, skinless chicken thighs

2 cups mixed mushrooms (shiitake, cremini, and button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon soy sauce

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Begin by seasoning the chicken thighs on both sides with salt, pepper, and thyme.

In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken thighs and sear them for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the sliced mushrooms to the skillet and cook until they are tender and have released their moisture, about 5-7 minutes.

Pour in the chicken broth, soy sauce, and balsamic vinegar. Stir to combine, and let the mixture simmer for about 3-4 minutes.

Return the seared chicken thighs to the skillet, nestling them into the mushroom sauce. Allow the chicken to simmer in the sauce for an additional 5 minutes, letting the flavors meld together.

Taste and adjust seasoning with more salt and pepper if needed.

Serve the chicken topped with the mushroom sauce and garnish with freshly chopped parsley.

                    Prep Time: 15 min | Total Time: 35 min | Servings: 4
