In a mixing bowl, combine the chocolate cookie crumbs with melted butter until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust. Place in the freezer to set for 15 minutes.
While the crust is setting, allow the mint chocolate chip ice cream to sit at room temperature for about 10-15 minutes to soften for easier spreading.
Once the crust is set, spread the softened mint chocolate chip ice cream evenly into the crust. Smooth the top with a spatula. Return the pie to the freezer to firm up for about 30 minutes.
In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
Remove the pie from the freezer and spread the whipped topping evenly over the layer of mint chocolate chip ice cream.
Sprinkle the semi-sweet chocolate chips on top of the whipped cream layer. If desired, add fresh mint leaves as a garnish.
Place the pie back into the freezer for at least 2 hours or until ready to serve.
When ready to serve, slice the pie using a sharp knife (dipped in warm water for clean cuts) and enjoy your refreshing dessert!
