Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with a little coconut oil or non-stick spray.
In a large bowl, mix together the rolled oats, brown sugar, baking powder, salt, and cinnamon until well combined.
In a separate bowl, whisk together the milk, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.
Pour the wet ingredients into the dry oat mixture. Stir until everything is well combined.
If using, fold in the chopped walnuts or pecans.
Pour the oatmeal mixture into the prepared baking dish. Sprinkle blueberries or banana slices evenly on top for added sweetness and flavor.
Bake in the preheated oven for about 30-35 minutes, or until the edges are golden and the center is set.
Once baked, remove from oven and let it cool for a few minutes before slicing into squares.
Serve warm, drizzled with additional maple syrup or a dollop of yogurt if desired.
