Ingredients

4 pieces of chicken thighs (bone-in, skin on)

1 cup brewed lemon tea (cooled)

1/2 cup buttermilk

1 tablespoon lemon zest

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup all-purpose flour

1/2 cup cornstarch

Vegetable oil for frying

Instructions

In a large bowl, combine the brewed lemon tea, buttermilk, lemon zest, garlic powder, onion powder, smoked paprika, dried thyme, salt, and pepper. Mix well to create a marinade.

Add the chicken thighs to the marinade, making sure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

After marinating, remove the chicken from the marinade and let excess liquid drip off.

In a shallow dish, mix together the all-purpose flour and cornstarch. Add a pinch of salt and pepper for seasoning.

Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium-high heat (about 350°F/175°C).

Dredge each piece of marinated chicken in the flour mixture, coating evenly. Shake off excess flour.

Once the oil is hot, carefully place the chicken pieces in the pan, skin side down. Fry in batches to avoid overcrowding, cooking for about 6-8 minutes on each side or until golden brown and an internal temperature of 165°F (75°C) is reached.

Place the fried chicken on a wire rack or plate lined with paper towels to drain any excess oil.

Serve warm with a wedge of lemon on the side for a zesty touch.
