Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy using a hand mixer or stand mixer.
Add the finely chopped lavender, lemon zest, and lemon juice to the butter mixture, and mix until evenly incorporated.
In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined and a dough forms.
Turn the dough out onto a lightly floured surface and shape it into a log or rectangle, approximately 1 inch thick. Wrap in plastic wrap and refrigerate for 30 minutes to firm up.
After chilling, slice the dough into 1/4-inch thick rounds and place them onto the prepared baking sheet, spacing them about 1 inch apart.
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust with additional powdered sugar if desired.
