Instructions
Preheat your oven to 400°F (200°C).
Arrange the baguette slices on a baking sheet. Brush one side of each slice with olive oil.
Toast the baguette slices in the oven for about 5-7 minutes or until golden brown and crispy.
While the bread is toasting, prepare the ricotta mixture. In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, honey, chopped basil, chopped parsley, and a generous pinch of salt and pepper. Mix until smooth and well incorporated.
Once the baguette slices are toasted, remove them from the oven and let them cool slightly.
Spread a generous spoonful of the lemon herb ricotta mixture on the toasted side of each crostini.
Top with halved cherry tomatoes for a burst of color and a fresh touch.
Drizzle a little extra olive oil over the top and sprinkle with additional herbs or microgreens if desired.
Serve immediately as an appetizer or a light snack.
