In a food processor, combine the pitted dates, rolled oats, shredded coconut, and almond butter. Pulse until the mixture is broken down and sticky.
Add the lemon zest, lemon juice, honey, and a pinch of salt to the mixture. Blend again until all ingredients are well incorporated and the mixture can hold its shape when pressed.
With your hands, scoop about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into balls.
Roll each energy ball in extra shredded coconut to coat them.
Place the energy balls on a baking sheet lined with parchment paper or a shallow dish.
Refrigerate the energy balls for at least 30 minutes to help them firm up.
