Instructions
In a medium bowl, whisk together the olive oil, chopped jalapeños, lime zest, lime juice, minced garlic, honey, paprika, cumin, salt, and pepper until combined.
Add the shrimp to the bowl and toss to coat them thoroughly in the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
Preheat the grill to medium-high heat.
Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer. If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.
Place the skewers on the grill and cook for 2-3 minutes on one side, then flip and grill for another 2-3 minutes, or until the shrimp are pink and opaque.
Remove the shrimp from the grill and let them rest for a couple of minutes.
Garnish with fresh cilantro and serve immediately with lime wedges on the side.
Notes
For a milder flavor, remove the seeds from the jalapeños.
