1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Prep the Pork Chops: Season both sides of the boneless pork chops with garlic powder, onion powder, paprika, salt, and pepper.

    Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until they are browned. Remove from the skillet and set aside.

      Sauté the Onions: In the same skillet, add the sliced onion and cook for 3-4 minutes until they are translucent. Add the minced garlic and sauté for another minute until fragrant.

        Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Dijon mustard, and dried thyme, mixing until well combined.

          Return the Pork: Place the seared pork chops back into the skillet, spooning some of the sauce over the top. Reduce the heat to low, cover the skillet, and let simmer for 10-15 minutes until the pork is cooked through and the sauce thickens slightly.

            Serve: Once cooked, remove from heat. Plate the pork chops, generously smothering them with the creamy onion sauce.

              Garnish: Sprinkle freshly chopped parsley over the top for a pop of color.
