2 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon cornstarch (optional for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Begin by seasoning the chicken thighs with salt and pepper on both sides.

    Turn the Instant Pot to the Sauté mode and add the sesame oil. Once hot, add the seasoned chicken thighs and sear for about 2-3 minutes on each side until browned. Remove the chicken and set it aside.

      In the same pot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, taking care not to burn them.

        Pour in the honey and soy sauce, and then add the red pepper flakes. Stir well to combine.

          Return the chicken thighs to the Instant Pot, making sure they are submerged in the sauce. Secure the lid and set the pressure release valve to Sealing.

            Select the Manual or Pressure Cook function and set the cooking time for 10 minutes on high pressure.

              Once cooking is complete, do a quick release of the pressure carefully. Open the lid and check the chicken for doneness. It should reach an internal temperature of 165°F (75°C).

                For a thicker sauce, mix the cornstarch with a tablespoon of water in a small bowl to create a slurry. Stir this slurry into the pot, then turn on the Sauté mode and let it simmer for a few minutes until the sauce thickens.

                  Serve the honey garlic chicken over rice or steamed vegetables, drizzling additional sauce on top. Garnish with chopped green onions and sesame seeds for an extra touch.
