In a large mixing bowl, combine the flaked salmon, breadcrumbs, honey, Dijon mustard, mayonnaise, and chopped green onions.
Add the beaten egg, garlic powder, black pepper, and salt to the mixture. Stir until all ingredients are well combined.
Using your hands, form the mixture into small patties, about 2-3 inches in diameter. You should get around 8 patties.
Heat olive oil in a large skillet over medium heat. Once hot, carefully add the salmon patties to the skillet. Fry for about 4-5 minutes on each side or until golden brown and crispy.
Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
