In a medium bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, cumin, paprika, salt, and pepper until smooth. This will be your marinade.
Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish and marinate for at least 1 hour in the refrigerator (up to 4 hours for more flavor).
Preheat your grill to medium-high heat.
Remove the chicken from the marinade, letting the excess drip off. Discard the used marinade.
Grill the chicken for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F or 75°C).
Once done, remove the chicken from the grill and let rest for 5 minutes.
Slice the chicken and garnish with fresh chopped cilantro before serving.
