Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, whisk together the honey, minced garlic, soy sauce, olive oil, grated ginger, and sesame oil until well combined.
Cut 4 large pieces of aluminum foil, about 12 inches long.
Place an equal amount of zucchini slices, red bell pepper slices, and green beans in the center of each foil piece.
Season the vegetables with salt and pepper, then place a salmon fillet on top of the vegetables.
Spoon the honey garlic mixture generously over each salmon fillet, ensuring they are well coated.
Fold the foil over the salmon and vegetables to create a sealed packet, pinching the edges to ensure no sauce leaks out.
Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flaky.
Carefully open the packets (watch out for steam) and serve immediately, garnished with fresh parsley or sesame seeds.
