Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute, then remove from heat and let cool slightly.
In a large mixing bowl, combine the ground turkey, chopped spinach, feta cheese, breadcrumbs, and grated Parmesan.
Add the sautéed onion and garlic mixture to the turkey mixture.
In a separate bowl, whisk together the eggs, dried oregano, salt, pepper, olive oil, and lemon juice until well blended.
Pour the egg mixture into the bowl with the turkey and other ingredients. Mix everything until just combined, being careful not to overmix.
Transfer the meatloaf mixture to the prepared loaf pan, pressing down gently to ensure an even shape.
Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
Once done, let the meatloaf rest for about 10 minutes before slicing. This will help it hold its shape.
Garnish with fresh parsley, if desired, and serve warm.
