Begin by marinating the chicken slices in a bowl with 1 tablespoon of soy sauce, minced ginger, garlic, and a pinch of salt and pepper. Let it sit for at least 15 minutes.
In a small bowl, mix the remaining soy sauce, oyster sauce, chicken broth, and cornstarch. Set it aside; this will be your stir-fry sauce.
Heat the sesame oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry until it's golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same skillet, add the broccoli, bell pepper, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender but still crunchy.
Return the cooked chicken to the pan, pour in the prepared stir-fry sauce, and stir everything together, cooking for an additional 2-3 minutes until the sauce has thickened and coats the chicken and vegetables.
Remove from heat and stir in chopped green onions. Adjust seasoning with more salt and pepper if necessary.
Serve immediately, garnished with sesame seeds for an extra crunch.
