Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, add the rinsed and drained chickpeas. Pat them dry with a clean kitchen towel to remove excess moisture.
Drizzle olive oil over the chickpeas and add minced garlic, smoked paprika, salt, and black pepper. Toss well to coat evenly.
Spread the chickpeas in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through for even crispiness, until they are golden and crunchy.
Remove the chickpeas from the oven and immediately sprinkle with grated Parmesan cheese while they are still hot. Toss gently to distribute the cheese.
Let them cool for a few minutes, then transfer to a serving bowl and garnish with fresh chopped parsley.
