Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the halved Brussels sprouts with the olive oil, minced garlic, red pepper flakes, salt, and pepper. Toss well to coat.
Spread the Brussels sprouts evenly on the prepared baking sheet in a single layer.
Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the sprouts are tender and golden brown.
Remove from the oven and sprinkle the grated Parmesan over the hot Brussels sprouts. Return to the oven for an additional 3-5 minutes, until the cheese is melted and slightly crispy.
Once done, take them out of the oven and let cool for a minute. Toss with fresh parsley before serving.
Notes
Feel free to adjust the amount of red pepper flakes to your spice preference.
