Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan, or line it with parchment paper for easier removal.
In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Set aside.
In a large bowl, beat the softened butter and granulated sugar together using a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.
Mix in the egg and vanilla extract until well combined. Then add the eggnog and mix until smooth.
Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix.
Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
In a small bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.
Once the sugar cookie bars are completely cooled, spread the icing on top using a spatula.
Sprinkle some extra nutmeg or cinnamon over the frosted bars for added flavor and visual appeal.
Cut into squares and enjoy your festive treats!
