Ingredients

4 bone-in pork chops, about 1-inch thick

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, sliced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for heat)

Fresh parsley, chopped, for garnish

Instructions

Prepare the Pork Chops: Season both sides of the pork chops with salt and pepper.

Sear the Chops: In a large skillet over medium-high heat, heat olive oil. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove the chops from the skillet and set them aside on a plate.

Sauté the Aromatics: In the same skillet, add the sliced onion and sauté for about 3-4 minutes until the onion is soft and translucent. Add the minced garlic and sauté for another minute until fragrant.

Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, Dijon mustard, smoked paprika, thyme, black pepper, and cayenne pepper (if using). Bring to a simmer and cook for about 3 minutes until slightly thickened.

Smother the Chops: Return the pork chops to the skillet, spooning some of the sauce over the top. Cover the skillet with a lid and reduce the heat to low. Let it simmer for about 15-20 minutes, or until the pork chops are cooked through and tender.

Serve: Once cooked, remove the chops from the skillet and drench them in the creamy sauce.

Garnish and Enjoy: Sprinkle with fresh chopped parsley before serving.
