Instructions
Preheat your oven to 400°F (200°C).
On a lightly floured surface, roll out the puff pastry sheet to smooth out creases and cut it into 4 equal squares.
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
In another bowl, mix the fresh blueberries and lemon juice together gently.
Place a tablespoon of the cream cheese mixture in the center of each puff pastry square.
Top the cream cheese with a tablespoon of the blueberry mixture.
Fold the edges of the puff pastry squares to create a border around the filling, pinching them together to seal.
Brush the beaten egg wash over the edges of the pastry to give it a nice golden color when baked.
Sprinkle a little granulated sugar on top of the Danish for added sweetness and crunch.
Place the Danishes on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown and puffed up.
Once baked, allow them to cool slightly before serving.
Notes
Serve warm, dusted with additional powdered sugar, and garnish with extra blueberries.
