Puree the Strawberries: Place the hulled strawberries in a blender or food processor and puree until smooth. You should have about 3/4 cup of strawberry puree.
Prepare Chocolate Mixture: In a microwave-safe bowl, combine the dark chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
Add Vanilla and Strawberry: Stir in the vanilla extract and strawberry puree into the chocolate mixture until well incorporated.
Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 1-2 hours, or until it’s firm enough to scoop.
Form Truffles: Once chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter) from the chocolate mixture. Roll them in graham cracker crumbs for a little texture.
Melt White Chocolate: In a separate bowl, melt the white chocolate chips in the microwave using the same method as before (30-second increments, stirring).
Drizzle the Truffles: Place the truffles on a parchment-lined baking sheet. Drizzle the melted white chocolate over the truffles for decoration.
Add Sea Salt: Sprinkle a tiny pinch of sea salt on top of each truffle while the white chocolate is still wet.
Chill Again: Return the tray to the refrigerator to let the chocolate set for about 30 minutes.
