Instructions
In a large pot, boil water and cook the tortellini according to package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
Pour in the diced tomatoes with their juices, stirring to combine with the garlic. Let it simmer for about 5 minutes.
Stir in the heavy cream and bring the mixture to a gentle simmer. Add the dried basil, salt, and pepper to taste, and mix well.
Add the cooked tortellini to the skillet and gently fold into the creamy tomato mixture, ensuring each piece is coated.
Add the fresh spinach to the skillet and cook for another 2-3 minutes until the spinach wilts.
Sprinkle the grated Parmesan cheese over the skillet and stir until melted and well incorporated.
Adjust seasoning as necessary, then serve hot, garnished with fresh basil leaves if desired.
Notes
Fresh basil leaves can be used for garnish.
