Instructions
In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.
In a blender or food processor, combine the avocados, cilantro, minced garlic, lime juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
In a large mixing bowl, add the drained pasta and pour the creamy avocado sauce over it. Toss well to combine, ensuring the pasta is evenly coated with the sauce.
Taste and adjust seasoning with additional salt, pepper, or lime juice as needed.
Divide the pasta into serving bowls, garnish with halved cherry tomatoes, and sprinkle with grated Parmesan cheese if desired. Serve warm or at room temperature.
