In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), shredded coconut, ground almonds, chia seeds, vanilla extract, and sea salt.
Mix all the ingredients well until combined into a sticky dough-like consistency. If the mixture feels too dry, you can add a little more almond butter or honey.
Once mixed, add dark chocolate chips or cacao nibs if desired and fold them into the mixture.
Scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls using your hands.
Place the rolled energy bites on a baking sheet lined with parchment paper or in an airtight container.
Refrigerate for about 30 minutes to set and firm up the energy bites.
Once set, serve them immediately or store them in the fridge for up to a week for a quick, nutritious snack.
