In a medium bowl, mix the diced apples with 1 tablespoon of granulated sugar and a sprinkle of cinnamon. Set aside to allow the apples to release some moisture.
In another large bowl, combine the flour, remaining granulated sugar, baking powder, cinnamon, and salt. Whisk to combine.
In a separate bowl, whisk together the egg, milk, and vanilla extract until fully combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the apples until they are evenly distributed in the batter.
In a deep pan or heavy saucepan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown.
Once cooked, remove the fritters from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
While the fritters are still warm, in a small bowl, mix together the powdered sugar and a pinch of cinnamon. Dust the fritters generously with the cinnamon-sugar mixture.
Allow to cool slightly before serving.
Notes
Serve warm with a side of caramel sauce for dipping.
