Peel the bananas and slice them into approximately 1-inch thick rounds. Place the slices on a parchment-lined baking sheet.
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
Dip each banana slice into the melted chocolate, ensuring it is fully coated. Use a fork to lift the banana from the chocolate, allowing excess to drip off before placing it back on the parchment-lined baking sheet.
While the chocolate is still wet, sprinkle crushed nuts and shredded coconut on top for added texture and flavor.
Once all banana slices are covered and decorated, sprinkle a light touch of sea salt over them for a sweet & salty kick.
Freeze the banana bites for at least 1 hour, or until the chocolate is set and hardened.
