Instructions
In a large mixing bowl, combine almond flour, coconut flour, baking soda, and salt. Mix well to ensure there are no clumps.
In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until a dough forms.
Fold in the mini chocolate chips and chopped walnuts if using, ensuring they are evenly distributed in the dough.
Using your hands, scoop out small portions of the dough and roll them into bite-sized balls (about 1 inch in diameter).
Place the cookie dough bites on a parchment-lined baking sheet.
Once all the dough is rolled, refrigerate the bites for at least 30 minutes to firm them up.
Serve chilled, or store in an airtight container in the refrigerator for up to a week.
