8 oz spaghetti

2 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (14.5 oz) diced tomatoes

1 cup chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and sauté until golden brown, about 5-7 minutes. Remove the chicken and set it aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté until the onion is translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine the Sauce: Pour in the diced tomatoes (with juice) and chicken broth. Stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Bring this mixture to a simmer.

          Add Cheese and Chicken: Stir in the cooked chicken and half of the mozzarella cheese. Let it bubble gently for about 5 minutes, allowing the sauce to thicken slightly.

            Mix with Spaghetti: Add the cooked spaghetti to the skillet, tossing gently to coat the pasta evenly in the sauce. Cook for an additional 2-3 minutes to heat through.

              Serve: Transfer the chicken spaghetti to serving plates. Top with the remaining mozzarella cheese and garnish with fresh basil if desired.
