Instructions
In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
In the same pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Add the broccoli florets to the pot and cook for about 3-4 minutes until they just start to soften.
Pour in the vegetable broth and bring to a simmer. Allow to cook for 5 minutes.
Lower the heat and stir in the heavy cream, followed by the cooked orzo. Stir to combine.
Gradually add in the shredded cheddar cheese, a handful at a time, stirring until melted and creamy.
Season with salt, pepper, and smoked paprika to taste.
Remove from heat and serve immediately, topped with grated Parmesan cheese and garnished with fresh parsley.
