Instructions
In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
Gently fold in the fresh blueberries, being careful not to crush them too much. Set aside.
In a separate large bowl, whisk together the eggs, milk, and cinnamon until well combined.
Heat a large skillet or griddle over medium heat and add a tablespoon of butter, allowing it to melt and coat the surface.
Take each slice of bread and spread a generous amount of the blueberry cheesecake mixture on one side. Top with another slice to create a sandwich.
Dip each sandwich into the egg mixture, ensuring both sides are well coated.
Place the dipped sandwiches on the heated skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
Repeat the greasing and cooking process with remaining sandwiches, adding more butter to the skillet as needed.
Serve warm, drizzled with maple syrup, and optionally top with additional fresh blueberries for garnish.
