Instructions
Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper, allowing some overhang for easy removal.
In a large mixing bowl, combine the rolled oats, chopped almonds, chia seeds (if using), and cinnamon. Mix well.
In a separate bowl, mix together the almond butter, honey (or maple syrup), salt, and vanilla extract until smooth and well combined.
Pour the almond butter mixture into the dry ingredients and stir until everything is evenly coated.
Gently fold in the blueberries, being careful not to crush them too much.
Transfer the mixture to the prepared baking pan and press it down firmly into an even layer.
Bake for 20-25 minutes or until the edges are lightly golden.
Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment overhang and let them cool completely on a wire rack.
Once cooled, cut into bars or squares. Store in an airtight container for up to a week, or refrigerate for longer freshness.
Notes
Arrange bars on a wooden board and serve with a small bowl of fresh blueberries on the side for a colorful touch!
